Heirloom No.1: Original Alto Beni

Our first batch of chocolate from HCP No.1, the (mostly unobtainable) original Alto Beni Heirloom-designated cacao. The genetics are somewhat different from Itenez and Tranquilidad, the other prevalent varietals in the region.

I’m tasting the chocolate only two days off the melanger, so the flavor’s a bit edgier than it will be after it ages. Nonetheless, the unique blend of Amelonado, Criollo, Forastero, and Nacional make for an unusually complex flavor.
