Stayed open during Saturday’s Storm, though it’s pretty clear what that blowing white stuff was.
On a fine stormy day we:
- Enrobed truffles
- Cut and finished marshmallows
- Taken a batch of chocolate off the grinder
- …and put a new batch on the grinder
- Made an elegant sculpture heart
- Sorted a cacao beans for roasted
- Watched snow blow sideways all day
- Drank many cups of green puerh tea
- Planned the recipe and grind for the new Almendra Blanca cacao
- Drank more tea
- Done a lot of dishes, though fewer than usual
- Actually served (a)(a few) a surprising number of customers
There’s now a lot more snow than there was when I took the photo this morning, and it’s mostly blowing sideways.
