Our first batch of roasted and winnowed MEXICO ALMENDRA BLANCA cacao nibs, a precious white bean variety with minimal bitterness.
We’re proud to be one of the first U.S. companies to have worked with Agrofloresta‘s exceptional Mexican cacao, and one of the first to produce chocolate from the new Almendra Blanca beans.
These are going into the grinder this afternoon. Once we taste the finished chocolate, we’ll work toward optimizing the recipe for these beans.
