Settled in after returning from a good trip to the Elevate Chocolate event in San Francisco, sipping HERITAGE GRAND SCARLET ROBE Wuyi Oolong tea from my friend Alice at Red Blossom Tea in San Francisco. I’ve paired it with a vibrant Fiji, Matasawalevu 74% dark chocolate from 9th And Larkin, also in SF. The chocolate’s crisp acidity nicely balances the bold richness of the deeply roasted tea.
While sipping and noshing, I’m grading homework for Ecole Chocolat’s Mastering Chocolate Flavor online class. This round I have 21 students from around the world learning about flavor perception and the origins of flavor in chocolate. It’s a really good class–I teach it twice each year.
