Yuzu Caramel

A LITTLE CLASS – Ten students, so not such a little class. I made this to demonstrate the “cloud caramel” technique to our Ecole Chocolat Master Chocolatier Caramel class.

Japanese yuzu lemon cloud caramel with Tequila and Hawaii red sea salt in Ucayali River Peru dark.
