Colorful piled pods of pure Criollo Cacao; typically tiny, grafted from rare wild trees scattered in the surrounding jungle. Designated Heirloom in 2016, this makes some of the rarest and most unusual chocolate in the world. Chocolate Maker Shaman spent the past week at the BFREE criollo farm in Belize overseeing experiments on how to best ferment these beans. They’re now drying, and we expect them to arrive on our doorstep in late June or early July.
