WE MAKE a recipe only once and then move on. This year’s strawberries are top-notch. I paired them with the herb savoury from my home garden, and am using Volker Lehmann’s magnificent Tranquilidad wild Heirloom cacao from Bolivia for the ganache. They’ll be truffles for the weekend and next week.

Pssst. Don’t look at the recipe–it’s a secret. For you chocolatiers out there, we’ll run a water activity test on the ganache, but I expect it to last 7-9 weeks without a problem.
