Guatemalan Chocolate

I just returned with 64kg of Guatemalan chocolate in my luggage–in interesting travel experience to say the least! These chocolates are custom-made for my by my friend Carlos Eichenberger of Danta Chocolate in Guatemala City.

Our TIKAL milk has increased from 43% cacao to 47%, making it crisper, more unctuous, and less sweet (it wasn’t particularly sweet to begin with!) A huge, complex, mouth-filling chocolate.

Our I’X JAGUAR 68% dark is delicate and nutty, with lychee and guava notes. A beautiful chocolate with a strong ancient criollo heritage.

Introducing WHITE JADE 40%–a mind-blowing real white chocolate that’s bold with a huge pure cacao flavor. Our previous Finca Los Ujuxtes white was magnificent, butWHITE JADE’s better.
