The chocolate is the very last “Fresa” bar by Dancing Lion Chocolate–pure Guatemala 70%. Tastes like fresh strawberries.
There’s a place in my heart for Guatemala cacao. My first visit to a cacao farm, many years ago, was Finca Los Ujuxtes a few hours north of Guatemala City; beautiful trees, beautiful hacienda, fried breadfruit and chile oil for lunch, spring-fed volcanic rock pool.
The Olmec people were likely the first to make chocolate from cacao, again in Guatemala, perhaps 4,000 years ago. Cacao from Guatemala is varied and complex, and nearly always a pleasure to make chocolate from!
