Renovation, Week 2

The books are gone. The bookshelves are gone. I spent the last week working intensively with designer, Beth Ehrie and architect/contractor  Paul Mansback. I am a man with a plan, and blueprints, too. Next week we’ll rip up the floor, finish demolition (destruction, glorious destruction), and start thinking about framing. Plans come together, great things are afoot!

Lest you believe all this is keeping me from my beloved chocolate, I crafted a new bonbon this week… Spicy Blueberries. Caramelized maple syrup quenched with butter, cream, fresh NH blueberries (thank you Manchester Farmers’ Market), Guavaberry liquor from St. Maartin and ground allspice in a white chocolate ganache. I finished the piece in a blend of Caribbean and Bolivian chocolates. $2.50 each, call or email me to order. My apprentice, Laura molded a batch of Just Cherries bars; dried Ranier cherries in my own Tango chocolate. $10 per bar.
