Ode to Cocoa Butter

Cocoa butter is beautiful. It’s the difference between cocoa powder and chocolate, and from a physics standpoint, it’s what makes chocolate interesting. Cocoa butter is also much maligned. I’m probably going to offend some purists with this, but

CHOCOLATE is cocoa butter
with impurities.
Cocoa solids suspended
in a crystal of magic
triglycerides
silky on your tongue
like silver moonbeams
skittering across taste buds to
tickle your olfactory epithelium
with vaporous volatiles and those
volatiles are impurities
suspended
in
cocoa butter.

So all the
chocolate snobs
out there the
“yuck they added cocoa butter
to my precious chocolate”
people the two-ingredient
(what the hell does
that mean, anyway?) ooh-la-lah
purists I say you should
remember that

CHOCOLATE is cocoa butter
with impurities.
