Around 2009, your humble Dancing Lion Chocolate chocolatiers began experimenting with the high quality “couverture” chocolates that were becoming more available. Laura and Rich independently created similar recipes that we’ve since merged into “The Zen Brownie.”
Zen Brownie is not too sweet, perfectly-balanced between fudgy, chewy and cakey, and flaunts the extraordinary nuance of fine chocolate and its magical cocoa butter.
Ingredients
- 4 ounces unsalted butter
- 4 ounces Dark, Milk or White Chocolate for Baking
- ½ cup granulated sugar
- ½ cup dark brown sugar
- ¼ teaspoon sea salt
- 2 teaspoons real vanilla extract
- 2 large eggs
- 1 cup all-purpose flour
- 2 tablespoons Raw Organic Cocoa Powder
Directions
- Preheat the oven to 350 F.
- Line an 8 inch brownie pan with buttered parchment and set aside.
- In a medium bowl, melt the Chocolate for Baking and butter together using either the microwave or double-boiler method. Cool slightly.
- When melted and smooth, stir in the sugar, brown sugar, salt and vanilla.
- Beat in the eggs, one at a time until each is fully incorporated.
- In a small bowl, whisk together the flour and cocoa powder, then gently stir into the chocolate mixture until just incorporated.
- Scrape the batter into the prepared pan and bake until a toothpick inserted in the center comes up with a moist, but not wet, crumb. Check first after 25 minutes, then every five minutes until done. Remove the pan to a cooling rack and cool completely.
Brownies take at least a day to develop their flavor, and brownies made with really high-quality chocolate take 2-3 days to reach their peak!
