Tasting Notes
April 15, 2013. Dark and shiny yellow-brown with an intense snap. I don’t sense a lot of cocoa butter; this chocolate starts sticky on the tip of the tongue. Initial flavor is bright with delicate notes of banana, pineapple and yellow curry. A grassy banana-pineapple unfolds mostly in the lower cheeks and back of the throat and the overall experience in is strong and pervasive with a good bit of acidity and surprisingly little bitterness. The taste holds solid in the mouth for a long time with little fluidity, and the aftertaste doesn’t significantly change once the flavor has developed.
