Visiting Forteza’s chocolate manufacturing facility in San Juan. Eduardo has lovingly rebuilt most of his equipment–like this roaster–by hand. “My grandfather used this equipment” he says. It’s in the genes: the Cortes family has been making Caribbean chocolate for almost a century, but Eduardo’s the first in the line to produce fine chocolate from Puerto Rican cacao.
