Sworn off making salt caramels. Everyone does it and it bores my brain. But the alder-smoked sea salt brings thoughts of Alaska. Salmon-filled rivers run crisply alongside the train ride on the way from Denali, bears on the mountain. A smatter of rain on a crisp summer day not too far from midnight and the sunlight is blazing and salmon is sizzling crisp on plate caramel-crusted alder-smoked and so I made caramels with thoughts of Alaska.
