PRALINÉ ROCHER (left) & CHILDHOODS’ END (right) truffles. The Rocher is Walnut Praliné around dark Ghana ganache, and the Childhood is Australian wattle seed on malty African milk chocolate ganache.

The Australian wattle seed tastes like a blend of coffee and vanilla, and was provided by my friend (and excellent chocolatier) Samanta Bakker, who currently resides there.
