LISTENING IN LAYERS. I simmered Great North Aleworks’ stout and I.P.A. with organic brown sugar for around five hours, brought it to a light caramel state with with orange, yuzu, and butter, and stirred in some malty Jivara milk chocolate.
THEN I made truffles and enrobed them in Guatemalan Finca Los Ujuxtes white. There’s a lot going on in this piece!
