ESOTERIC PLUM – Crispy plum truffle with Buddha’s Hand Citron and licorice in Amano’s Macoris Hispaniola dark chocolate rolled in sugar and finished in Ghana dark.

I made a slightly different version of this finished in our Guatemalan Tikal milk chocolate to share at the Fine Chocolate Industry Association’s (FCIA) “Elevate Chocolate” meeting next weekend.
