RULE OF THIRDS – fresh blood orange with chocolate from Vo Thanh Phuoc’s farm in Vietnam, newly designated as Heirloom number 18. The chocolate has a lovely up-front tropical fruitiness with spice undertones. I added a touch of local honey and sweetgrass extract. Finished in Yuzu and tangerine sugar.
