Wrapping up after a long day at L’Ecole Valrhona in Tain l’Hermitage. Over three days, the students are exposed to many typical artisan techniques. My job’s to provide guidance, answer questions, and assist the Chef and Chef Assistant. We’re working from 8:30am to 6:30pm daily, so everyone’s working pretty hard.
