
Shaman and I are performing a routine “cut test” on our newly-received cacao from Hacienda Victoria in Ecuador to evaluate the quality of the beans and fermentation. These are nice and clean. If you were fortunate to taste one of last year’s SILK FLOWERS bars, we made them the our test batch of this same cacao. It has a gentle floral flavor that’s deeper and rounder than most Ecuador I’ve tasted.
We hope to get the first batch of chocolate on within the next couple of weeks, then get SILK FLOWERS bars–Ecuador dark with Chrysanthemums and Marigolds–into regular rotation.
