I met Mark Harman at the Fine Chocolate Industry Association meeting in New York this past summer. He and his partner, John MacDonald, started Mesocacao to produce chocolate from Honduran and Nicaraguan beans. We discussed cacao and chocolate flavor, and he left me with a few samples. Mark and John’s chocolate shows tremendous potential. After several long, interesting discussions with Mark, I decided Mesocacao’s Nicaragua 80% is a perfect fit for Dancing Lion Chocolate.

The cacao is grown in Matagalpa, Nicaragua, a mountainous region in the central part of the country, and results in a chocolate that fills the mouth with a deep easygoing taste. You’ll find it in our Mayan Style Drinking Chocolate, Zen Brownies, 451 Bars, and wherever else we decide is appropriate for the flavor profile.
