Meeting Eduardo Cortez of Forteza Chocolate to talk cacao with the staff at the Mayaguez USDA agricultural research station. The station has developed ten strains of cacao specifically for farming on the island. We’ll talk genetics with the staff then tour the collection, including the newest collection of island Ancient Criollo cacao.
