is technically different than polishing polycarbonate chocolate molds, but maybe it’s the same after all (I acquired my new soul–my third–last week and am still coming to grips with it). Each mold must be perfect; chocolate shows every flaw. In a few hours I’ll temper dark chocolate for Bengal Bars and milk chocolate for Quantum Bars and then I’ll be at it again. Polishing your soul appears to be a never-ending task. I’ll let you know when I’ve finished.
