Kallisti, Goulden Apples

From the top of the world at Gould Hill Farm in Contoocook, New Hampshire, I’ve worked delicately-complex chestnut crabapples and a splash of Calvados into a blend of fruity Bolivian 68% dark and caramelly Venezuelan 40% milk chocolate.

Named for mountain that overlooks one of Maine’s finest purveyors of fine ales, this piece is a perfect melding of the  Atlantic Brewing Company’s Brother Adam’s Bragget Honey Ale with a citrussy 64% Madagascar dark chocolate. The result is a full-flavored ganache that leaves you with the fragrance of pure ale.

Still Life, with Calamondin

Fresh from my mother’s own tree on the Florida panhandle, tart orangy-lemony calamondins pureed and lightly caramelized, then encased in a cacao pod shell of full-bodied Ghana 68% chocolate. Powerful, tart, deep, rich.
