Patric Rio Caribe 70%

November 2009 Cacao Connoisseur’s Club Tasting Notes

Potent fragrance of olivewood. The tiniest sliver on the tongue hits your mouth with the intensity and power of a locomotive: clean, fruity, a little tart, softening slightly as it fills your mouth. Brightness settles, leaving you uplifted.

Patric chocolate-maker Alan McClure seeks nuance and interest from each type of bean, from each bar. Rio Caribe  is a blend of fine criollos and forestaros from the Paria Peninsula of Venezuela.

The Patric is great, and thanks to you, I’ve found another favorite manufacturer… I’m pretty sure Patric bars will never let me down.

The aroma was almost mesmerizing and there seemed to be an evenly blended subtleness of earthiness, sweet fruit, and flowers (if you can taste flowers??) and although I have never categorized any bar I have ever tasted, in my notebook I noted it as edgy-sophisticated.  It’s nice, and I bet pleasing to almost everyone.
