Patric chocolate-maker Alan McClure seeks nuance and interest from each type of bean, from each bar. Rio Caribe is a blend of fine criollos and forestaros from the Paria Peninsula of Venezuela.

The aroma was almost mesmerizing and there seemed to be an evenly blended subtleness of earthiness, sweet fruit, and flowers (if you can taste flowers??) and although I have never categorized any bar I have ever tasted, in my notebook I noted it as edgy-sophisticated. It’s nice, and I bet pleasing to almost everyone.
