House-dried pineapple with Chimayo Chile’s and toasted Imperial Sichuan peppercorns in earthy Nicaragua dark chocolate. There’s nothing Thai here but inspiration. The pineapple’s bright, the Peppercorn’s numbing, and the chile flavorful, not hot. More Sichuan than Thai, and the chocolate’s the pun.

I really just wanted to play with the fresh pineapple that Donna dried for the shop. And the blend of chiles and Imperial Sichuan peppercorns is *so* Sichuan.
