
This is from the 2022 harvest of Bolivia Tranquilidad Wild-Harvested Heirloom cacao. The chocolate begins smooth and creamy, and quickly develops deep black cherry notes. I paired it with threads of sweet sea kelp from Nishiki Market in Kyoto, Japan, along with large flakes of coarse sea salt.
