Chips of house-candied ginger with Grenada cinnamon and gently sweet Gold Threads black tea in Mexico Almendra Blanca dark milk chocolate.
I’m not sure why this bar makes me so happy. The colors, the flavors; perhaps because I’m enamored with this particular dark milk chocolate. White bean cacao is precious and rare; highly sought for it’s lack of harsh bitterness. Almendra Blanca is a white bean cacao harvested at indigenous farms in Mexico’s Chiapas region. The cacao’s natural spice and vanilla notes make for an elegant dark milk chocolate.

I thought ginger was a bromeliad but it isn’t, its part of the Zingiberaceae family, nice and pungent. This is a wild bar with crazy good chocolate and a lot going on, but not spicy.
