Just finished churning crazy BUDDHA’S HAND – HAWK’S CLAW ICE CREAM: aromatic Buddha’s Hand citron with Japanese Hawk’s Claw chiles and El Salvador chocolate chips.

Now onto preparing CROISSANT dough for the weekend’s croissants: Traditional, Chocolate, Chocolate Almond, and Kouignette.

This afternoon I’ll make the dough for this week’s GOOD BREAD: Chocolate Ciabatta.
