JACOB’S TURTLES – toasted pecans and butter caramel in precious HCP#11 heirloom chocolate from Belize.
To date, the Heirloom Cacao Preservation Fund has designated only 15 heirloom cacaos in the world. Number 11 in Belize, grown by herpetologist (yeah, he studies reptiles) Jacob Marlin is caramelly, nutty, and sweet, even at a whopping 80%. Jacob likes turtles, so I made caramel turtles with his chocolate. (Thanks Jacob!)
