Playing with some new craft couverture. Chocolate maker Dick Taylor just sent us samples of their new Belize 70% dark and 50% milk chocolates designed for pastry chefs and Chocolatiers. The chocolate is beautifully fluid and includes Sunflower lecithin so it can be used for ganache emulsions.
