Unmolding our new Sub-Liminal squares for tasting kits. Sub-Liminal is Nicaraguan 100% dark chocolate with mace, salt, and heirloom chiles.

This is an interesting experiment in flavor perception: while the chocolate has no sweetness, the mace and salt fool your brain into thinking it does. I used aromatic heirloom chiles, so the heat is mild and comes very late.
