Tuscans make gianduja from chocolate, hazelnuts, and sugar because they prefer their chocolate sweet. I make gianduja from chocolate, walnuts, and sugar, because I don’t. I enjoyed my first family-style Italian meal with Paul De Bondt and his wife Cecilia Iacobelli in in Pisa, just after he taught me about making and breaking the rules of gianduja.
