How many perfectly executed chocolate desserts have I tasted (from otherwise perfectly executed restaurants);
Beautiful, elegant, perfect chocolate desserts that had
no soul?
No soul because the chocolate had no soul. I, who love the nuance and life in each varietal from each region with every terroir in the hands of each spectacular chocolate maker, want to taste the soul of the chocolate in a chocolate dessert.
And so we were pleased to welcome Pastry Chefs Deanna Rossetti and John Daniels from Martingale Wharf in Portsmouth, NH; visiting Dancing Lion Chocolate to learn about the Soul of Chocolate. We taught them taste, flavor, origin, temper. We look forward to the fine desserts they will make. Perfectly executed, with perfect soul.
