I’ll be working with PIURA 70% this week, a beautiful white-bean chocolate from Peru. The flavor is crisp and bright throughout, with a moderate underlying fudgy base, and ahint of strawberry-guava tartness on the finish. Watch for it in some of our upcoming bonbons and bars.
