Chef Donna and I hanging out with Jacob Marlin at BFREE’s research cacao farm. BREE’s doing some interesting experiments to better understand density and shade for criollo cacao trees. And the trees do look happy.
Spent the rest of the day cooking and baking with Mayan Chef Eddie. His tortillas are a revelation; he gave me both his recipe and some serious hands-on tutoring. He also shared his recipe for real chocolate chocolate cake, which I’ll be sharing with you sometime in the future. In exchange, I showed him how to make Olmec drinking chocolate, which predates the Mayan style, and Chef Donna taught him our Zen Brownie recipe. Turns out Eddie’s a fiend for a good brownie. It was an honor to work in his kitchen.
